I agree with Jeff. Learn a handful of the most useful and achievable "compound" chords and you are 95% there already. As for the jumps you mention I'm afraid that you will have to learn them. It is one reason that you don't often hear songs like "stardust" on accordion. By the way, Jeff's example of...

What the manuals won't tell you is the quality of the sound from the speakers and the "ease" of programming due to better displays and more knobs and switches. This is where reviews and YouTube come in handy.

Rome often sees them working the tables in the summer but often they play the same music over and over. Sometimes you may be lucky. One time I had a lovely street concert with an excellent accordionist and an opera singer. Was delightful. They got and deserved a good tip :)
